I’ve been using Amy Klobuchar’s recipe (shared here) for hotdish qua hotdish, but this past weekend I dusted off an old favorite, the Santa Fe Casserole Bake (recipe here):

I like mine with extra diced peppers for color and texture. And as a bonus, making it allowed me to use up some tortilla chips that were getting a little too stale to enjoy a la carte. Efficiency is the soul of a good casserole!
